Eggplant Mozzarella

I’ve been blogging for about six months now, and today will only be the second post ever where I discuss cooking.  And there’s a reason for that.  My cooking prowess consists of finding recipes other people create and following them step by step with absolutely no deviations.  Because historically, my deviations have been disastrous!  I still have nightmares of lemon meringue soup pie I made one evening many years ago.

But I do have something to share with you today.  I went to Woodman’s today (best grocery store ever!) and bought two eggplants for 79 cents (did I mention I love that place?!).  I had planned to use them later in the week, but they kept calling to me from the refrigerator.  See, over here at the Indisposable home, we love us some eggplant something fierce.

So I went searching through recipes online to find something quick and easy.  My standard eggplant parmesan recipe calls for pan frying.  Now from a health standpoint, I don’t mind pan frying because I use extra virgin olive oil in place of vegetable oil, but from a time and patience standpoint, I just couldn’t do it today.

And then I found it.  My new go to eggplant recipe — Martha Stewart’s Eggplant and Mozzarella Melt.  Now I am in love.

The basics of the recipe (directions can be found through the link above) are very similar to eggplant parmesan, the only real difference being bread.

Her recipe calls for Italian bread, but I try to keep only whole wheat bread in our house, and since I didn’t have a chance to run back to the store for Italian, I just used whole wheat sandwich bread.  I’m sure in the future I will continue with the whole wheat bread because it tasted delicious and is so much healthier.  The only other change I made is that I used Italian style Panko instead of breadcrumbs because when given an option, I will ALWAYS choose Panko.  Who wouldn’t?

And the best part is that everyone loved it!  Magoo thanked me for making it, and the Goose never once cried for something else to eat.  All in all, it was a resounding success.
